Roast pork made with tomato paste from Milos

 

 

Ingredients

 

 

  1. 1.5kg pork shoulder chuck, sliced
  2. 2 onions, sliced
  3. 4 cloves garlic, minced
  4. 200gr tomato paste from Milos
  5. 2 big tomatoes, grated
  6. 200gr honey
  7. 200gr olive oil
  8. 3 Tbsp. pork fat (optional)
  9. 25gr vinegar
  10. 1 teacup red wine
  11. 1 tsp mace
  12. 2 tsp black pepper
  13. 1 tsp red pepper (optional)
  14. 2 tsp thyme
  15. 1 kg potatoes, chopped

 

Preparation

 

 

Put pork and potatoes in a big bowl, add all ingredients and mix well so the meat is fully marinated. Leave the meat in the marinade for 2-3 hours, put in a baking pan, add water to almost cover meat and bake for 2.5 hours at 200 degrees.
