Roast pork made with tomato paste from Milos
Ingredients
- 1.5kg pork shoulder chuck, sliced
- 2 onions, sliced
- 4 cloves garlic, minced
- 200gr tomato paste from Milos
- 2 big tomatoes, grated
- 200gr honey
- 200gr olive oil
- 3 Tbsp. pork fat (optional)
- 25gr vinegar
- 1 teacup red wine
- 1 tsp mace
- 2 tsp black pepper
- 1 tsp red pepper (optional)
- 2 tsp thyme
- 1 kg potatoes, chopped
Preparation
Put pork and potatoes in a big bowl, add all ingredients and mix well so the meat is fully marinated. Leave the meat in the marinade for 2-3 hours, put in a baking pan, add water to almost cover meat and bake for 2.5 hours at 200 degrees.
